This is my go-to fix if I'm feeling less good and more gross (toxic, lethargic, bloated) and HUNGRY - a combination of sensations that usually come about after a particularly feast-focused weekend or a vacation with friends in Mozambique, hashtag 2M :)
It feels indulgent (thank you eggs, avocado, feta and dressing) but is still very 'clean', allergy-free, additive-free, trans fat-free, high-fiber, and super-low carb. Also: delicious.
Basically meal goals.
Here's the "recipe":
Reset Salad with Avocado +Eggs
Ingredients (for 3 servings):
3 eggs
1 avocado
1 cup cherry tomatoes
1 wheel of goat's milk feta cheese
1 cup sugar snap peas
1/2 cup sprouts (bean, alfalfa, or any other)
1/2 red onion, haloved and sliced
1/2 calamata olives, pitted and chopped
A bed of fresh, crunchy leaves (e.g. Rommaine, Butterhead)
Dressing:
1 tablespoon smooth mustard
3 tablespoons olive oil
2 teaspoons apple cider vinegar
1 small clove garlic, crushed
1 teaspoon raw honey
1 teaspoon tahini
pinch sea salt
pinch pepper
Boil eggs in a pot of water on the stove for 7 minutes, turn off the heat and let stand for about 3 more minutes, then rinse with cold water and peel once cooled.
Pick a big bowl that you like a lot (my sister made this ceramic bowl that has the ability to make any of it's contents delicious, call her an alchemist and me bias)
Slice and chop your ingredients in any create way you like and lay them on your bed of roses I mean lettuce.
Mix your dressing with a spoon, serve your salad, chop it up and dresssss.
You might have noticed that this is hardly a recipe, more of a guideline, and ingredients can be subbed for just about any raw, crunchy veg that you like (cucumbers, carrots, artichoke hearts, blanched broccoli, grated beets, red peppers) . I would highly recommend adding some sauerkraut or kimchi to the mix becasue that's your gut bacteria's fave cuisine and a happy gut is a happy life.
